Finally a post for Monday

I finally, actually just now thought of Mondays theme for posting.

Misc Mondays
T's 10- on Tuesday or --- ??
Wordy-Wordless Wednesdays
T's 10 - on Thursdays --??
Food Fridays
Scrap with Me Saturdays
Sundays ??

WooHoo for progress, yes we celebrate the little things around here (even snack time is a big deal--tea party).
So far I've spent nap time catching up on blog posts from the weekend. This post will catch me up to date, 9 posts for August.

It's fair week so things might get a little wonky on the blog, or I could be super organized & get some posts ready early...lol. Like that's going to happen. ;)

Happy Monday, we've had a little bit of a busy one so far. Brody had his 4 1/2 month check up, he's growing like an average boy should. Weighing today at 14 pounds 6 oz & measuring 25 inches long. He had to get shots today, which he did NOT love & he's spending the afternoon grumpy & restless.

Now off to entertain my little herd for a while. Leave me a comment letting me know what you'd like to see here on Tuesdays/Thursdays/Sundays. If I chose your idea, I'll send you a little something special. :)

A late Food Friday

If you're a regular you know that I love cooking/baking & have a rapidly growing, collection of cookbooks. If not, then you do now.

Last week I spent a lot of time in the kitchen, on a few new recipes.

One of my favorite sources for recipes is Taste of Home, I get 2 of their publications delivered through snail mail & occasionally pick up others from the store. Another place I visit quite often for inspiration & guidance is Allrecipes.com . It's like my insta-source, if I'm in a hurry & don't have time to search through the recipe box (which is actually a small kitchen cart).

This months issue has a little section on jams. The last time I went to the grocery store, blueberries were on sale (the big tubs), so I grabbed a few with this Luscious Blueberry Jam recipe in mind. (TOH Aug/Sept 2010, pg 49)

8 cups blueberries
2 Tbsp lemon juice
1 pkg powdered fruit pectin
7 cups sugar
Basically mash blueberries, add lemon & pectin, bring to a roiling boil, add sugar, bring back to rolling boil, & boil for 1 minute, process into freezer containers, cool for 24 hours at room temperature & freeze.

Aside from a caution that says, this one splatters alot, so keep any little helpers out of the kitchen until it's off the burner. All I can say about this recipe is HEAVEN in a jar. It would be good on pancakes/waffles instead of syrup, tastes great on biscuits or directly off the spoon (I made extra on Sunday morning just to test it out), hubby took PB&J today, it's sooo yummy!

------------------------------------------

The next recipe is a bit of a shocker, I gave some away & they had no idea what they were eating (in a good way). It's a great way to use up some of that zucchini that is over abundant in the summertime. I'm not really a chocolate cake kind of girl, but there's something about brownies that are irresistible.

Modified* Zucchini Brownies
1/2 cup vegetable oil
1 cups white sugar
1/2 cup Splenda*
2 teaspoons vanilla extract
1 cup all-purpose flour
1 cup whole wheat flour*
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
1/2 cup chopped walnuts

Frosting:
6 tablespoons unsweetened cocoa powder
1/4 cup margarine
2 cups confectioners' sugar
1/4 cup milk
1/2 teaspoon vanilla extract

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 8x12* inch baking pan. In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flours, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan. Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched.

To make the frosting, melt together the 6 tablespoons of cocoa and margarine; set aside to cool. In a medium bowl, blend together the confectioners' sugar, milk and 1/2 teaspoon vanilla. Stir in the cocoa mixture. Spread over cooled brownies before cutting into squares.

These are so delicious, you'll never know that there is zucchini in them. ;) Shh... feed them to the kids & they'll never know either & will get some veggies in while their at it.

----------------------------------
Last but not least on this Food Friday on Monday afternoon, is Martian Cookies. These are yummy. My first experience with them was last summer when I had zucchini overflow. I do make a few changes to the original though.

1/2 cup butter, softened*
3/4 cup white sugar
1 egg
1/2 teaspoon vanilla extract
3/4* cups all-purpose flour
3/4* cups whole wheat flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup quick cooking oats
1 cup grated zucchini
1 cup chopped walnuts
1/2 cup chopped pecans*
1/2 cup semisweet chocolate chips
1/2 cup peanut butter chips*
1/4 cup white chocolate chips*

Preheat oven to 350 degrees F (175 degrees C). In a large bowl beat butter and sugar until fluffy. Add egg and vanilla, beat well. (Taste. I'm not really sure why, but tasting that butter/sugar mixture is one of my favorite things)

In another bowl stir together flour, cinnamon, baking soda, and salt. On low speed, gradually add four mixture to butter mixture, beat until well mixed. With a wooden spoon*, stir in oats, zucchini, walnuts & pecans, chocolate pieces. (I just use the large paddle on my stand mixer for this, because it's pretty thick dough & I'm not really a stir it in by hand kinda gal)

Drop by rounded teaspoons (I like to use an ice cream scoop) about 2 inches apart onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown.

Happy Cooking!

Falling Behind

Dang it! I've fallen behind... I was really trying hard to post once a day this month. But never fear, I'll be back later today *technically since it's after midnight now* with a few posts to fill in the gap.

And maybe even a little give-a-way in celebration of 100 Facebook fans!

10 Things Thursday

I actually waited until Thursday for this week's 10 things post.

10 Things--I accomplished today
1. Got a shower before noon (before 8 am even, that's a MIRACLE)
2. Gave the girls a Tea Party for snack time
3. Made Blueberry Jam (PS if you do this, it splatters ALOT)
4. An afternoon of quiet time
5. Baking
6. Baking some more
7. Baking even more
8. Used up all the zucchini I shredded (about 15 cups worth)
9. Took a few photos
10. Social Networked (lol)

So as you see, today I pretty much just baked. Probably 7 hours worth (give or take time to eat, feed the baby, hang with the hubby, do the dishes *more than once).

Have a great rest of the evening. I've got a busy morning planned, I'm finishing my quilt, since the girls are having a sleep over with Fum-Fum, it'll be quiet around here & I'll be able to stretch it across the living room. But first, I will finish this last batch of muffins & then sleep.

Not so Wordy Wednesday

Saturday we spent about 4 hours watching & waiting to watch air tankers land at our local airport for a fire that broke out. Here are some images I took during that time.

(with a little vintage-ish edit to it)

The ever serious boy.

My little Queen of Dirt (so hard to get natural smiles from her to shine through--she's such a poser anytime the camera is visible)

The little big girl--she's growing up so fast, more kid like & less toddlerish these days.

The Big One

and the not so biggish one.

Enjoy the day!

A new veggie {Food Friday}

Woohoo! It's Friday, which is synonomous with weekend (not that SAHM's really get a weekend), which means, Daddy will be home for 2 days & we have no real agenda this weekend, we're not camping or going anywhere significant, so it'll be nice just to hang out at home. However, I will be going on Saturday, hopefully early in the morning, to go to some Yard Sales.

-------------

I'm sure I've mentioned this before, but in case I haven't, or you're new to reading my blog, we try to eat something new at least once a week. Whether it's a new recipe, a new way to eat a food we already enjoy, or something new all together, we try to expose our kids & ourselves to something new.

This week we tried a new veggie, thanks to the neighbors garden: Swiss Chard. I can't say it was my most favorite vegetable ever, but it was decent. I'm not really one for cooked leafy greens though. We've decided to try it again, but I'll prepare it a little differently, still cooked down & such, but we're going to add some sauteed onions to it.

The aforementioned garden is also producing zuchinnis that apparently didn't get the memo & took steroids anyways--these things are huge--and also lots yellow squash. The other 'new' thing from this week was my favorite Zucchini Pancakes, but with a little something extra. I made up my normal batter (except I was out of cheddar cheese, so used mozzarella) & instead of all zucchini, I added in yellow squash. Yum. These are seriously one of my favorite things to make in the summer, they remind me so much of my Granny ♥.

Not everyone at our house could try the Swiss chard, but that's okay, he got something new this week too...Brody is now eating rice cereal & loving it. He needed something to make up for all that rolling & scooting he's doing now.

-------------

So now that I've talked about all this new food, I've got the motivation to go plan out next weeks meals & search the 2 new Taste of Home magazines that came this week for another new recipe (or 2,3, maybe even 10) to try.
I think I'll also get some zucchini bread in the oven, as well as some really yummy zucchini cookies we tried out last year, and maybe some of these too. (yes we have THAT much & probably more).

Come back tomorrow for Scrap with Me Saturday--I've got a few new pages to showcase!

Class of 2011 {Specials}

Hey Class of 2011
Only 2 days left to book your session for 1/2 price!!!

SENIOR PORTRAITS
2011 Seniors schedule your Top Of The Class Session by July 31st for 1/2 price! (session must take place before October 1st)

Almost missed it {life}

If I hurry up & type this out quickly, this post will still go under Thursdays date.

I'm definitely ready for the weekend, for some fun in the sun & hitting up some yard sales. In search of new projects to add to my ever growing list, that I really need to start working on.

I know I did a 10 Things post on Tuesday, but since time is short & I haven't processed many photos for the web this week, I'm going to do another 10 things post & then showcase the last couple of fair entry photos (which is in 2 weeks-how time flies).

10 Projects on my To-Do list:
1. Finish my big quilt, the one I started over 5 years ago--I finally have everything necessary for the backing, just need to get to work.
2. Start the girls' new bedding--super cute & inspired by this. I picked up the fabric when we visited my sister Memorial weekend.

3. Wall Collage for my room with the kids' feetprints, etc. I picked up the shadow frame when I got to go shopping by myself a few weeks ago.
4. ReDesign/align my collage wall --just needs squared up.
5. Print new photos for the various little frames around the house.
6. Work on the kids' 'year' books
7. Move the girls' into 1 room & Brody into his own room (decide on his theme & work on that)
8. Start putting together ideas, collecting supplies, etc for our "Homemade Christmas"
9. Redecorate/arrange our bedroom
10. Make a new camera bag & matching strap and/or a new purse

Being Thursday, it's new release day at the Digi Chick & Nikki has this amazing kit, Back to the Farm, this week. It makes me super happy. My favorite green/yellow, tractors, pink, daisy, a sunflower..just lovely stuff. There's also a new template set (I used one on this page as well).

Have a great Thursday for another 24 minutes. Hopefully tomorrow I won't be so late. :)

Almost missed it {life}

Almost missed the Wednesday post that is, & today it's minimal word Wednesday. And after being gone most of the afternoon, it puts me a little behind on that list I posted yesterday, so I'm going to bed early by an hour so I can get a good portion of it done tomorrow *hopefully all of it*.

Another 2 of my fair entries for this year...can't believe it's already time for this.

Have a great Thursday!
