Catching Up {Life}

Why is it when 'Catch Up' is on the to do list, it's never really fully accomplished? Maybe it's lack of motivation to complete the list or addition of extra helpers who create additional to-dos or a multitude of other things.



It seems like catching up has been on my list for a while now and I don't think it's ever going away. Oh well, I'll stay busy that way right?!? As if I need any help in that department, the 3 little monsters take care of that for me.

Yesterday I did get a couple of things done, one of them being deciding on an ordering fair entries. I have a total of 15 image this year that I'll be entering.



I also managed to make an apple pie, which sounded so yummy, not sure it turned out quite like I had hoped, but it still tastes good, it wasn't done until way too late though, so we'll enjoy it tonight, hopefully while watching a lightning show.



Now, I must be going so I can 'Catch Up' on more of my list. Watch for more fair entry photos in a later post.

I still haven't figured out what type of posts to make regular features on Monday, Tuesday, Wednesday or Thursday ... so for today it'll be (almost) Wordless Working Wednesday, I've seen a few Wordless Wednesdays around & I've got lots of things on my to do list, so in an attempt to make this post in 5 spare minutes.

Yummy New Foods {Food Fridays}

In an attempt to be a better blogger, or at least more regular, I'm working on a few ideas for posting. Here's what I'm thinking so far: 1st of the month, update/recap life; Food Fridays; Scrap with me Saturdays; Sunday Specials.

Here is the first of (hopefully) many--Food Fridays! I don't always use recipes or stick to them if I am using one. I am horrible at measuring &/or timing my cooking times, so measurements & such may be approximate. :)

Grilled Pizzas
I adapted this recipe for Pizza Dough & it was delish!
Ingredients:
1 cup warm water
1 packet dry yeast (roughly 1 tablespoon)
1 tablespoon sugar
2 tablespoons olive oil
1 tablespoon honey
2 1/4 cups flour, sifted
1/2 teaspoon salt
1/2 tsp Italian Seasoning (my addition--approximately, I just did a large pinch)
1/2 cup shredded Italian cheese blend (my addition --I used 1 handful)

In a large bowl add the warm water and yeast and sugar and stir to dissolve the yeast. Wait ten minutes and allow the yeast to activate.Add the olive oil, and honey and stir until the honey dissolves. Add the flour, salt, Italian Seasoning & cheese. Mix together until a dough forms. Remove the dough from the bowl and, on a floured surface, knead and form into a smooth ball shape. Place the dough into a greased bowl and cover with a clean, dampened towel. Place in a warm, draft free place for 45 minutes to 1 hour, or until the dough doubles in size.

Turn the dough out onto a floured surface and cut it into 5 equal pieces. Shape each into rounds by hand for "artisian" pizza. Heat BBQ on high, oil grates very well with oil, place each personal dough onto grill. Grill for 3-5 minutes, until side 1 is crispy, flip over & add sauce & toppings. Continue grilling until dough is done & toppings are heated through (about 5-7 minutes). (times aren't precise) YUM!

The other day when I was browsing food blogs/sites looking for the perfect pizza dough, yummy cupcake ideas & then some, I came across this recipe for Watermelon Limeade. I thought it sounded so, so refreshing. I did change it up slightly & didn't let the melon sit for the amount of time it called for. Just passed it through the cheese cloth & rang it out. I didn't add vodka, however, this would be FABULOUS as a mixed drink (when mom tasted it she said tequilla, think Watermelon Margarita). It's sweet & tart & oh so yummy.

Watermelon Limeade
1 1/2 cups of water
1/2 cup of sugar

1/4 tsp of lime zest
(I didn't measure this, just zested 2 limes)
1 cup lime juice (I used 8 limes & 1 lemon )

Watermelon, cubed, enough to fill the blender


Place sugar, water, and lime zest in a small saucepan over medium heat. Stir mixture until the sugar is dissolved. Take off heat and add to lime juice and stir. Strain the lime simple syrup into a pitcher through a seive to catch the zest. Purée watermelon cubes in a blender or food processor with 1/2 cup lime simple syrup. Dump the puree into the pitcher, through the sieve lined with cheesecloth, when as much liquid as possible has gone through, gather up the edges & squeeze the watermelon out. Refrigerate for 2 hours to chill. Serve cold.



One of my favorite things that we used to have in the summer at my Granny & Pa's was Homemade Vanilla Ice Cream. It was my job once the freezer started slowing down, to lick the paddle & make sure everything tasted just right (of course it always did--Granny's have a way of doing that) Here is the recipe that she used, I changed a few things, so this will have those things noted.

Vanilla Ice Cream--Granny's Recipe
This is for a 6-quart ice cream freezer
4 eggs
2 1/2 cups sugar
6 cups milk (I used 4 cups milk & 2 cups heavy cream)
4 cups 1/2 & 1/2
2 Tbls vanilla
1/2 tsp salt

In a (very large) bowl, beat eggs until they are frothy, beat in sugar until well dissolved. Add the remaining ingredients & mix well. Pour into freezer & freeze following manufacturers instructions.

Summer Adventures {My LIfe}

Summer Adventures - June 2010 (just a fair warning...this is going to be a LONG post).

Our summer has been wonderful so far, lots of busy weekends, some camping & it's only just begun. As you know we started out the month unpacking from a trip to visit my sister in Eugene. Grace must have thought the wind blowing in the window was a lot like the dunes trip because I looked back as we were driving through town & she was having a blast!


The following weekend we stayed around home doing things: went to High School Graduation & I had a portrait session.

The 2nd weekend in June was also a stay around home weekend; I took Anna on a yard sale date and then we went out to the lake for a picnic and family adventure picnic. Hubby did yard work & again found our friendly neighborhood slithering creature.


This is the 2nd time we've found this ''little'' guy in the yard, he's about 5 feet long-UGH!

During the week, Anna deceided it was the best idea to play dress up with Brody, he didn't really agree.


We celebrated my 26th birthday this week as well; my hubby took me out to dinner, we ended up going nowhere that he had planned, because apparently in our small community, it's cool to be closed on Mondays.

Fathers day weekend we spent in Brookings, camping at Harris Beach with my dad & family.

We had a lot of fun, went on a little {unplanned} hike, which I DO NOT advise if you're packing a kid, not wearing shoes &/or pushing a double jogging stroller (haha).

Made s'mores (if you have never done this you should: spread the graham crackers with Peanut Butter-YUM, or instead of chocolate bar you could just use a PB Cup).

Enjoyed the peaceful relaxation of camping & Oregon Coast (even if it was windy & sand blasting occurred when we stepped foot on the beach).

We left Brookings to travel home on Fathers Day, but first we had some lunch with my sister & nephew, after we played on the beach for a little while (actually they played, I mostly fed the baby)

Anna got to start Kindergym at the local Y. She really likes it & looks forward to going.

Grace continues to be our little spit-fire, tornado & resident dare devil.

She couldn't wait to get out the door & stomp in the rain. If she's riding the horse, she's not just riding the horse, she tests its limits, most days trick riding (aka: standing up on it and riding it), tipping it as far forward & back as it can go.

Thankfully, to counter balance the 2 crazy girls, we have calm, sweet & smiley Brody. He's such a wonderful baby, usually only crying to eat, be changed or held & he loves to snuggle and bath time (a lot).


This past weekend I took the kids to a birthday party on Saturday, hubby stayed home & worked on the fishing boat/trailer (a craigslist find that needs some sprucing up).
Sunday we packed up the herd & went to my Grandpas for a little birthday celebration, he turned 87 on the 29th.

We didn't take the boat, but we did go to the lake before the birthday celebration to do a little fishing...except it was too hot & the fish weren't interested in our hooks.

I made fried chicken, pasta salad & this really, super yummy Strawberry Cake (although this says cupcakes, I just did a single cake. & if you refridgerate the frosting, be sure to bring it to room temp before spreading or 'fluffing'- I learned the hard way) with homemade vanilla ice cream (Pa's most favorite thing, & I'm pretty sure he ate 12 servings that day).

The kids got to play with their cousin & run around enjoying the sunshine. It wouldn't be a day at Pa's without a little sarcastic humor, as he says to Grace "Most kids manage to get dirty during the day...what happened to you" :) haha She was literally a ball of dirt.


Sunday night it was beautiful out & I was about ready to download images to the computer, when I thought about taking one of the moon. It was such a nice night. We are loving the warm, sunny days & clear cool nights.

Off to do a little more work before the long weekend & more camping!

Mr E's Turning 1 {Portrait Session}

Happy Summer {My Life}

Well it's technically not really summer yet, but we're on our 1st camping adventure of the year. It's a 1st with all three kids too, so we'll see if our summer plans remain the same once we return..


I'm sure when we get back we will be ready to be home for a week. :) But who wouldn't want to come home when this is right out the back door?!
